MISSIONS :
​
  • Réalise des préparations culinaires après avoir déterminé les approvisionnements qui lui sont nécessaires.
  • Supervise les commis de pâtisserie et leur attribue les tâches.
  • Participe à la réalisation des objectifs du département de la Restauration.
  • Répartit avec efficacité ses tâches de travail pour la plus grande satisfaction du client.
  • Respecte les ratios définissant les quantités d’ingrédients à employer, respecte les fiches techniques.
  • Fait preuve d’initiatives pour l’amélioration ou la création d’une recette, tout en avisant le Chef Pâtissier car la régularité en matière de cuisson et présentation est essentielle pour les mets suggérés aux menus et cartes.
