The Sushi Chef’s responsibilities include preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed. You should also be able to customize orders according to preferences and food allergy considerations. You should ensure that all ingredients used in dishes are of the highest quality and should work well under pressure and maintain restaurant standards during busy periods. + Check all prepared sushi mis en place and food stocks, replenishing as needed and informing senior management of any shortages.
+ Assist in the smooth running of shifts and work with the Head/Sous Chef to prepare all sushi mis en place before service begins.
+ Confirm special requirements, outstanding orders, and tasks with the duty Sous Chef.
+ Ensure efficient food service by liaising with other sections of the kitchen.
+ Control food waste by maintaining correct stock levels and following proper rotation methods (FIFO).
+ Ensure food preparation and presentation meet Kitopi’s standards, with all food items labeled and within date.
+ Stay updated on menu changes, specials, and function menus before service begins.
+ Report any issues or concerns about kitchen operations or staff behavior to the Sous Chef or Head Chef.
+ Assist in other kitchen sections as needed, particularly when the workload increases.
+ Request permission from the Head/Sous Chef for breaks and remain on duty until relieved.
+ Report any accidents or kitchen equipment defects to the Head Chef or duty Sous Chef.
+ High school diploma or equivalent.
+ Minimum of 1 year of experience in a similar role, particularly in sushi or Japanese cuisine.
+ Knowledge of sushi preparation, kitchen equipment, and food hygiene standards.
+ Ability to work efficiently under pressure and in a fast-paced environment.
+ Strong communication and teamwork skills.
+ Attention to detail and commitment to high-quality food preparation.
